Why Bikaneri Bhujia can only be manufactured in Bikaner || The story of this legendary snack that has earned itself a geographical tag
Bikaner is famous for its fort, palace, havelis, and food. In fact, when it comes to food, there's one popular snack that has put Bikaner on the global food scene. It isn't a secret, but it is proprietary. And the snack is known as Bikaneri Bhujia.

As per the Geographical Indications Registry of India, application no. 142, only the Bhujia produced in a specified region in and around Bikaner can be termed as Bikaneri Bhujia. Here are the details of the application: https://search.ipindia.gov.in/GIRPublic/Application/Details/142. The Tag was recently renewed for another 10 years recently and is now valid till 2028.
Bikaneri bhujia was first prepared in the kitchens of Maharaja Shri Dungar Singh ji in 1877. Back then it was known as "Dungarshahi Bhujia" especially when it was served to the special guests of the king. The snack later evolved to become the main source of livelihood for a large portion of population of the region.

Some of the top manufacturers of Bikaneri Bhujia are Bishanlal Babulal, Bhikaram Chandmal (allegedly the inventors of bhujia about 125 years ago), and Chotu Motu Joshi. Haldiram bhujiawala also owned a shop in old Bikaner earlier, but it is now shut down. Instead, Haldiram has opened a large factory at the outskirts of the city.
The main raw material for manufacturing bhujia is Moth gram, which is grown in the arid zone of Rajasthan. Add to this the saline water available from deep wells, in this drought prone area and you have the perfect ingredients for this amazing snack. Rumors have it that one of the secret ingredients of the bhujia is also a fistful of pure, clean desert sand. But no one will accept this or deny this. :) How is that for a mystery?
